I had never heard of brining a turkey. My aunt told me she used to brine hers, but only in salt water. I followed your directions, even on the baking, to the letter and it was magnificent! My husband hated to see me using the wine in that manner, but he even enjoyed it, and he doesn't eat poultry. It was a beautiful bird. My husband took a picture of it. He was impressed. I checked the date on my newer box of baking soda waiting to replace the opened-nearly-empty box and I was shocked to see that the new box had a use by date of 2004 and the old box a date of 2002.
