The Today Show and Yummy No-Bake Summer Desserts

This week on my regular appearance on the Today Show, co-anchors Matt Lauer and Meredith Vieira joined me to prepare recipes from the Beyond Ice Cream story in the August issue of Martha Stewart Living magazine.  There are plenty of summer occasions that call for a great dessert, but who wants to heat up the kitchen by turning on the oven?  This collection of recipes spend time in the fridge or on the stovetop, which certainly helps to keep things cooler!  I hope you try these desserts - they’re delish!

Matt and Meredith joined me to prepare recipes from the Beyond Ice Cream story, beginning on page-76, in the August issue of Martha Stewart Living magazine.

This is the August issue filled with great ideas - look for it on newsstands!

It takes just seven ingredients to make a real family favorite. People can't get enough of chocolate, banana, and graham cracker icebox cake.

For the very best flavor, use bananas that are really ripe.

Chopped milk chocolate is placed in a bowl for melting.

Here I am pouring a warm creme anglaise-like custard, through a sieve, over the chocolate to melt it.

Look how beautiful and delicious this slice of chocolate, banana, and graham cracker icebox cake looks.

These are the ingredients for the mixed-berry slump.

A mix of blueberries, raspberries, and strawberries simmer over medium heat.

Here I am explaining how to make the biscuit dough for the mixed-berry slump or grunt.

This task got Meredith's hands quite messy.

We joked that she was rendered useless!

In no time at all, our hands were clean for the next step.

Other wonderful no-bake desserts in the story include peach melba spoom, no-bake fudge brownies, and an amazing no-bake cherry cheesecake

These are the no-bake fudge brownies studded with peanuts and flakes of sweetened coconut.

The peach melba spoom is made with raspberries, peaches and a frozen meringue.
