2 For this chat, I wanted to make two delicious recipes from the new season of "Martha Bakes" which premieres today on PBS. This is my Kitchen Sink Cookie - one of my favorites.
3 Whenever cooking or baking, it is very important to prepare your mis en place - a French culinary phrase meaning "putting in place" as in setting-up all the ingredients to be cooked or baked.
4 Four our video chats, producer Tina Weber Carmelich is in charge of the audio - she is holding the boom microphone overhead.
5 Producer, Sam Schutz, is recording the entire show on an iPhone. These chats have become so fun - and they are so easy to do.
7 You will need two sticks of softened butter. One of my favorites is this Kerrygold pure Irish butter. It is so delicious. http://kerrygoldusa.com

9 Place your ingredients into the bowl of your standard mixer.
11 Domino is used on the east coast, while their C&H brand sugar is used on the west coast. https://www.chsugar.com
12 To prevent losing moisture, store a slice of bread wrapped in cheesecloth with your brown sugar. The cloth is there, so crumbs don't drop in the sugar.
13 If your brown sugar is hard and needs softening, place it in the microwave, with a small glass bowl of water, for a few seconds and it will soften.
14 Then keep your sugar in a closed container. I have very handy closable containers at Macy's. http://goo.gl/TPcVtq
15 Add in two large eggs. I just brought in a huge bowl of fresh eggs from my chickens.
16 Look at all the delicious eggs my wonderful chickens are producing.
17 This recipe also calls for white, granulated sugar and some pure vanilla extract.
18 For the two-cups flour, use Bob's Red Mill All-Purpose flour. Bob and his team make American grown grains and turn them into the best flours, such as this white, organic, unbleached variety. http://www.bobsredmill.com/
19 When testing baking powder, place a teaspoon into a bowl of water and see if it fizzes. If so, it is fresh.
20 When testing baking soda, place a teaspoon into a bowl of white vinegar and look for the fizz to show freshness.
21 Next, put in one and a half cups of old-fashioned rolled oats. Be sure they are rolled oats to get the best cookies. Again, I use Bob's Red Mill.
22 Add in your cookie flavors - walnuts, coconut, chocolate, raisins, dried apricots, etc. This is a paddle board from my collection at Macy's. http://goo.gl/RS7kKj
23 It becomes a big, heavy dough, so finish stirring it and combining all the ingredients by hand.
24 Use an ice cream scoop to place your cookie dough onto the baking sheets. These will be big cookies - only two on a sheet.
25 It's a good idea to have scoops in several different sizes - they come in very handy.
26 Using a scoop allows the cookies to come in uniform sizes.
27 Then place them into a preheated oven at 350-degrees Fahrenheit for 16-minutes.
28 Here are some cookies already cooled.
29 The recipe makes eight to 10 firm cookies, and when broken they are moist, chewy and delicious.
30 You can certainly make these cookies smaller, but why would you want to?
31 The crust for the Atlantic Beach tart is made from crackers. Just crumble them into the food process or do by hand.
32 My recipe calls for a scant sleeve of saltines - about 39-crackers, or four ounces.
33 Then add the butter and grind it up pretty fine - use the pulse option on your food processor.
34 Then, mold the crust into a nine-inch fluted pan with a removable bottom, or glass pie plate.
35 Using the back of a measuring scoop can help make molding the crust into the pie tin a little easier. Chill the crust for about 15-minutes.
36 For the filling, combine four egg yolks, and a half-cup of citrus juice. And save the egg whites - egg whites can be saved in the freezer.
37 And then a whole 14-ounce can of condensed milk. I love condensed milk - it is so good.
38 After it is chilled, place the crust in the oven for about 18 minutes until it is a little brown. Then, pour in the filling - it is all so easy to do.
39 Place the pie into the oven.
40 Once it is finished, make some whipped ream out of heavy cream and confectioner's sugar.

42 Doesn't it look wonderful? And you can make this a day ahead of time.
43 I put the whipped cream into a pastry bag and just placed dollops of cream onto the top of the pie.
