With the holidays approaching, I've been all about pies lately. We held a pie contest on my television show on Monday and invited the winner, Marjorie Johnson back to the show on Tuesday to demonstrate her recipe for English Toffee Pecan Pie. Yesterday, on the Today show, co-host Meredith Vieira and I decided to have a little contest of our own baking apple pies. Meredith brought her mother's original recipe in and I came prepared to make one that I call the 'Mile High Apple Pie.' Co-host Matt Lauer was the judge, a position that made him a little nervous, I think.

DIRECTIONS

Pate Brisee (makes enough for 6 double-crust 4-inch pies):

Pulse flour, salt, and sugar in a food processor until combined. Add butter, and process until mixture resembles coarse meal, about 10 seconds. With the machine running, add water in a slow, steady stream until mixture just begins to hold together.

Shape dough into 2 disks. Wrap each in plastic, and refrigerate 1 hour to 2 days (or freeze for up to 1 month; thaw in refrigerator before using).

Mile High Apple Pie:

Preheat oven to 450 degrees. On a lightly floured work surface, roll out the smaller piece of pate brisee into a 15-inch round about 1/8-inch thick, dusting surface with flour to prevent sticking, as needed. Brush off excess flour. Roll dough around rolling pin, and place over a deep-dish 9-inch pie plate. Line plate with dough, pressing it into the corners. Trim dough to within 1 inch of the pie plate. Cover with plastic wrap; refrigerate.

Roll out remaining piece of dough into an 18-inch round. Transfer round to a baking sheet; cover with plastic wrap, and refrigerate.

Peel and core apples, and cut into 1/4-inch-thick slices. Place slices in a large bowl; sprinkle with lemon juice to prevent discoloration. In a small bowl, combine flour, sugar, and cinnamon; toss with apple slices.

Remove remaining dough from refrigerator; place apple mixture into prepared pie plate, mounding it in a tall pile. Dot filling with butter. Place dough round over the apples. Tuck edge of top dough between edge of bottom dough and rim of pan. Using your fingers, gently press both layers of dough along the edge to seal, and crimp as desired.

Using a paring knife, cut several vents in top of dough to allow steam to escape. In a small bowl, whisk together egg yolk with 2 tablespoons water to make a glaze. Brush surface with egg glaze; sprinkle with sugar. Place on a baking sheet; this will catch any juices that may overflow during baking. Bake until crust is golden, about 15 minutes.

Reduce oven temperature to 350 degrees and continue baking until crust is golden brown and juices are bubbling, 45 to 50 minutes. Remove from oven, and let cool completely before serving.

One year ago, I took you on a Halloween adventure through the cemetery located at the St. Matthews Church in Bedford, NY. I received so many interesting comments from that blog, so I thought it would be fun to continue the tour. As it turns out, there happens to be thirty cemeteries located throughout Bedford. Some are tiny family plots, overgrown and neglected. Others, like the St. Matthews and the Old Bedford cemeteries are located in high traffic areas and are maintained nicely.
Cemeteries are considered by many to be eerie places, however, I find them fascinating. There is much to be learned about the history of an area by reading old grave markers, such as family lineage and how young or old people were when they passed away. I was very happy to hear from the Bedford Historical Society that there is now a committee, which has been working on clearing overgrown cemeteries and on properly cleaning and restoring many of the ancient headstones. I feel it's so important to preserve history in all its forms. Please enjoy this year's jaunt through the cemeteries and I wish all of you a creepy and spooky happy Halloween!

On Friday, I showed you some beautiful 4th of July photos taken by my driver, Rock. As I told you in that posting, my company invited employees to view the fireworks from the rooftop of the Starrett Lehigh building. I thought it would be fun to ask anyone who took pictures if they would like to share them on my blog. Judging from the photos that were submitted, the evening of fireworks over the Hudson River was a spectacular occasion.

I know that people are curious about how my house is decorated for Easter, so I thought I'd give you a little peek. Laura Acuna, my housekeeper, always does such a nice job helping me with setting out the decorations. Many of these decorations are handmade and you can find instructions for all sorts of wonderful projects in my new Encyclopedia of Crafts, which, by the way, is #2 next week on the New York Times bestseller list! Congratulations to all who worked so hard on this volume.
This is an especially busy week with Passover and Easter being just a few days apart. I really love traditions and was so fortunate to attend a lovely Seder at my friends, the Slotkins. Now, I am gearing up for Easter and I am preparing a lunch for family and friends. The menu I am planning is:

Rack of lamb

Martha Stewart ham from Costo

Pierogi (I really miss Mom)

Artichokes

Asparagus

Garden salad from the cold house

Homemade rolls

Lemon meringue tarts

Last November, I blogged about the amazing art show that my employees put together, displaying many of their fabulous pieces of art. Now, I’d like to tell you about another wonderful show held before the holidays – an employee craft fair and bake sale. Initially, the craft fair was scheduled to be held next spring and then the sad news came that our annual company holiday party was cancelled. It has been customary each year at the holiday party for employees to decorate stockings and do a toy drive to benefit the children of the George Washington Carver residences in New York City.

Still wanting to do something for the children, it was decided to move the date of the craft fair up and also invite employees to bake items for a bake sale, raising money for that cause. As it turns out, the bake sale portion of the fair raised over nine hundred dollars, to be used for a holiday luncheon for the children of the residences and also for school supplies and toys. It was impressive how many people contributed to the sale and the craft fair, once again, proved just how talented the staff at MSLO is! Come, have a look.

◄ Back

Next ►

Picture 1 of 43: Employees setting up for the show

See All Photos in this Gallery

To celebrate the holidays, I took my assistants, my property manager, my hairstylist, and my manicurist out to dinner in New York City. We went to Benoit, a fabulous bistro owned by Chef Alain Ducasse.  It’s very French both in menu and décor. The reason I chose Benoit is because that’s where my former chef, Pierre Schaedelin has relocated to. Pierre has become a partner and the executive chef of Benoit and he seems very happy there. Come and see the restaurant and some of its food.

I was passing through the craft department at the Starrett Lehigh building the other day. It’s always fun to stop and see what magic they’re creating and on that afternoon, glitter was flying! They were working on a holiday gift for the staff of the company that manufactures the products for the Martha Stewart craft lines, (EK Success) which are available at Michael’s and at Wal-Mart. The craft department thought it would be fun to present them with a special tree decorated with glitter birds and they were happy to show how they do it. With so many wonderful colors of glitter to choose from, you’ll see that it’s rather easy to have amazing results.

A ‘Greener” Approach to Holiday Greeting Cards!
I love the idea of giving and receiving holiday greeting cards. However, recently, I’ve been focused on using fewer resources and this year, I decided to go a bit ‘green’ by sending a holiday postcard instead of a traditional folding card enclosed in an envelope. Because my mailing list is so large, this idea has actually saved a lot of time and has certainly cut down on the amount of paper that was used in the past. Please have a look at my line of Kodak Martha Stewart products HERE.
