On the second day, we went deep sea fishing. Captain sandy, a neighbor and a real Bahamian, took us in his boat. The weather was pretty perfect.
This funny rock is called Dont Rock. It is covered with succulents and is, of course, unoccupied by humans.
Jimmy and me up top - I steered while Sandy and the others trolled for fish.
I came down to see if I could catch something.

The sea is getting a bit darker.
We had four rods out.
The first thing I caught was a barracuda - Sandy kept it for bait.

This is Sandy's fish cleaning station back on shore.

Fileting the fish - a sharp knife is de rigueur.

My first island dish was well-received - arroz con pollo, a recipe I learned on a trip long ago to Puerto Rico - go to marthastewart.com for the recipe - I added cabbage to the original and it was really good.
I also roasted pineapple with rum and demerara sugar.
Fried plaintains were also very popular.
I smashed the slices with the bottom of a bottle and fried the plantains in olive oil and a bit of butter until golden brown - yum!
The pineapple was juicy, sweet, and really good.
Here's the very small kitchen from which came many really good meals.
