1 Our Martha Stewart Cafe is open Monday through Friday, from 7am to 4pm. We have coffees, loose-leaf teas and fresh pastries every day!

3 This is one of our four baristas, David Chatterton, taking an order on the iPad. The term "barista" comes from the Italian word for "bartender." They specialize in preparing espresso-based drinks.

5 The day started strong and stayed strong. People started queueing up early in the morning, and our baristas were ready.
6 I wanted the baristas to wear white shirts with their fun aprons and hats. It gives them a crisp, clean look. The aprons and hats were specially designed for us by one of our American Made makers, Hedley and Bennett of Los Angeles. 7 On one side of the cafe, we set up a station with different types of milk, including soy milk and almond milk, plus lids, napkins, straws, and stirrers... everything our customers may want for a good cafe experience.
8 We partnered with Kobrick Coffee, a fourth-generation family owned business and roaster. They sourced the custom beans for Martha's Breakfast Blend as well as the espresso beans we use. http://www.marthastewartcafe.com/products/
9 Our cold brew iced coffee comes in two generous sizes - medium and large. Cold brew coffee contains up to 70-percent fewer acids than heat brewed, making for a much smoother, richer tasting beverage.
10 Our baristas went through thorough training, so they could work in a well-organized assembly line. They are all trained to take orders and prepare drinks. Good, efficient customer service is very important.
11 Orders are placed where they can easily be seen and prepared by each barista.
12 Here I am with John Grusso and Linh Nguyen from Kobrick Coffee. Linh trained our baristas, while John took notes as they prepared drinks and interacted with the customers. This was a great way for us to assess what needed improvement.
13 Laura Bonnie takes special care in pouring the steamed milk. We spent lots of time interviewing prospective baristas in order to find the very best ones for the job.
14 Our loose-leaf teas are provided by Wei Bertram of Connecticut-based Arogya Tea. They include: Martha's Breakfast Blend, Chai, Da Hong Pao, Emerald Mountain, Jasmine Silver Needle, Lemon Ginger, Peppermint, and a big favorite, Buckwheat. http://www.marthastewartcafe.com/products/

28 We have several sizes for our coffees: small, medium and large, plus cups for our single and double espressos. An espresso is defined as coffee that is brewed by forcing nearly boiling water under pressure through finely ground, compacted coffee beans.
29 Our loose-leaf teas were a big hit. One of the favorites was the ancient grain Buckwheat tea.
30 Our baristas work very well together, and every order is done carefully, and accurately.
31 Baristas David Chatterton and Anise Daniel know where everything is, and are able to reach their supplies and ingredients quickly and easily.
32 What's wrong with this photo, can you tell? We had such a successful opening day, we ran out of pastries before the afternoon rush. We adjusted our orders right away, so we're ready for the next service.
33 Thomas, Lynn and I assessed what small details needed tweaking to better streamline the operation.
